Lets talk food!

After eating cafeteria food all week last week I currently feel the need to consume nothing but tasty fresh foods!  This week I seem to be in love with all things salad!

Curried Chicken Salad

This one is a staple in my diet rotation mostly because it is healthy and easy to throw together.

Mix together a large can of chicken (drained) Greek Yogurt (about 1/2 cup) and curry powder to taste.

These are my favorites right now!

Let sit in the refrigerator for at least 30 minutes.  Serve on top of spring mix with grapes and walnuts, or with crackers, or tortilla chips, the possibilities are endless!

Summer Quinoa Salad

I have been buying this at the farmer’s market but they did not have it this week so I tried to recreate the recipe and it rocks!

1 cup dry Quinoa (cooked al dente)

1 yellow squash sliced thinly in quarters

Chopped Scallions (about 1/4 c.)

Frozen Peas (about 1 cup)

Red onion diced (1/4 of a large onion)

Mix all of the ingredients with the juice of one lemon, 2 tbs. olive oil, and salt and pepper to taste.

Also, has anyone tried the new coconut Chobani?  It is to die for!!!!!
